“Ohitsu” is a wooden container into which cooked rice is transferred, and was used in every household before the electric rice cooker became popular.
In long established restaurants that take a keen interest in the taste of rice, Ohitsu is often still valued as it makes the freshly cooked rice taste even more delicious.

Sawara cypress used for Ohitsu is soft wood, and contains a lot of oil, making it water-resistant and antibacterial.
Rice contained in an Ohitsu will retain its freshness for a whole day.
The gentle fragrance of the Sawara cypress goes well with the rice, and is appetizing.

The Ohitsu is made of straight grain Kiso Sawara cypress over 100 years old.
Straight grain wood is characterised by its high water absorbing property and because Kiso Sawara cypress itself is resistant to moisture, it can be used regularly for many years to come.
It is used as a serving container with a cover for rice.

How to use an Ohitsu Before using Ohitsu for the first time, there is a little preparation to ease the excess smell of the Sawara cyprus.
Don’t worry, it is not difficult at all. First of all, wash the Ohitsu in tap water.
Then pour in the water which the rice has been washed, and leave for approximately two hours.
Wash again, and wipe the surface with a dry cloth. After the initial preparation, rinse inside the Ohitsu before each use, so the rice would not stick to the surface of the wood.

After using, remove all traces of rice by washing with cold or lukewarm water.
If it is not washed thoroughly, it will lead to mould and blackness.
Wipe thoroughly with a dry cloth, and leave to dry in the shade.
Dishwasher or dryer should not be used.
And be careful not to dry in direct sun-light as this will lead to cracks or shrinking of the wood, and would loosen the hoops.
