This knife made of three-layer structure.

Core material is Aogami Super Carbon Steel, and both side material is soft stainless steel. Aogami Super Carbon Steel is a superlative steel for professional knives. So, it is extremely sharp and sharpness long lasting. However, it gets rust easily, so it needs keep it maintenance.

Aogami Super Carbon Steel is one of the greatest Japanese Carbon Steels. Hitachi Metals Ltd., around 1.4% carbon, aogami base + 0.4% molybdenum, 0.4% vanadium, HRC 61-65. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum.

It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

This high-quality steel is even harder and stronger when it is treated well. Able to take very sharp, resistant edges, it cuts beautifully.

Kiritsuke knives are a hybrid design combining features of Japanese usubas and yanagibas. Many appreciate the striking aesthetics of the profile and the reverse tanto profile makes the pointed tip very nimble but also delicate while the flat profile lends itself well to chopping and push cutting.

Kiristuke is originally a knife for slicing a Japanese dish called "Yosemono" or "Nagashimono", which is made of agar. Since its long straight blade is similar to Yanagiba and Usuba, it is often used for slicing sashimi and cutting vegetables too.

Similar to Japanese swords, Sakai cutlery is also produced through a process of forging.
The features of Sakai cutlery are rooted in superior metalworking and sharpening techniques.
This is a traditional characteristic of Sakai cutlery, recognition of which has resulted in designation as a traditional craft product by the Japanese Minister of Economy, Trade and Industry.

Sakai knives manufacturing process is divided into 3 stages; forging, grinding, and attaching the handle.
It's a division of work in which each craftsman creates using special skills.
In the forging process, the hardness as well as the stickiness of steel are improved in order to make the knife sharp and difficult to chip. There are technical processes such as Hagane-zuke (forging 2 kinds of steel - soft steel and steel), Yaki-Namashi (slowly annealing hot knife-shaped steel), Yaki-ire (immediately chilling steel in the water right after heating it to 780 - 800 degrees), and Yaki-Modoshi (heating steel to 160 - 180 degrees again in the furnace).
In this way, the process of making each product requires very difficult and professional techniques which only experienced craftsmen can perform.

Use & Care
Apply mild detergent on a soft sponge or wet cloth to clean. Do not use bleach. Do not use dishwasher.
Use a clean dry cloth to wipe and dry it immediately after every use.
Use sharpening stones to sharpen Japanese knives do not use a sharpening steel.
For less frequently used knives apply oil very thinly after the knives are sharpened cleaned and dried.
Do not cut frozen foods.
