This is a genuine taiyaki plate with cast iron for professional use, which is actually used in taiyaki shops in Japan.

Cast iron is made by pouring heated molten iron into a mold.
During this process, microscopic air pockets form in the metal.
Plate of cast iron, which is porous needs to be usually　seasoned prior to first use.
The process of seasoning fills the minute pores of the rough metal surface with carbonized oil, forming a protective barrier against oxidation, and helping to prevent food from sticking.

Seasoning your plate creates a patina, or a protective coating inside of the pan. Every time you cook with oil, the patina becomes thicker and heavier and creates a natural, non-stick cooking surface.

Pour a bit of flaxseed oil or lard into the plate and spread over the inside surface up to the rim.
Put the plate over moderate heat and remove when the oil begins to smoke.
Then let the plate cool completely.
With a clean cloth or paper towel, wipe off any excess oil and your plate is now ready to use.
